Pinterest Recipe:Cookie For One

I had the house to myself Sunday night. I was craving something delicious and not fat-free.

I found an interesting Pin on Pinterest. It showed how to make a cookie for one in the microwave. This was just what I needed. (well…not needed…but wanted)

Here is the recipe:

1 T butter melted

1 T white sugar

1 T brown sugar

3 drops of vanilla

a pinch of salt

1 egg yolk

1/4 cup flour

2 T chocolate chips

(optional) 1 T chopped pecans

Mix it all together in a coffee mug or microwaveable bowl. Microwave for 40-60 seconds.

This is how mine looked-

It looked mostly done but still a little moist.

While warm I added some ice cream, chocolate syrup, and whipped cream.

Why not go all the way? Am I right?!

Of course, not everyone out there likes chocolate chip cookies (weirdos) or maybe they are a little more health conscious (I should be with 5 extra pounds since quitting insanity!). So here is an alternative.

This is a more healthy s’more-

2 chocolate graham cracker squares

2 T Cool Whip

2 fresh strawberries, sliced in half

Just spread the thawed Cool Whip on each square. Lay the sliced strawberries on the Cool Whip. Sandwich the two halves together. Stick them back into the freezer until the Cool Whip hardens up.

And enjoy!

  1. I guess I am a weirdo because although that does look yummy, I wouldn't choose a choc chip cookie. :)
    Those graham cracker sandwiches don't look bad though!
