DIY Dressing

As you know, I was doing a juicing/vegan fast last week. I was eating lots of fruits and veggies and nuts. I was having a lot of salads because that is an easy way to get the green leafy stuff into your diet.

What I didn’t realize is that we were all out of suitable dressings. All we had in the house were creamy, milk-based dressings. Since I wasn’t having any milk, that wouldn’t do.

I didn’t feel like dragging all the kids to the store just to get salad dressing. Then it dawned on me that I could try to make my own. I knew that I had some balsamic vinegar on hand because of a roasted vegetable recipe I’d tried a while back.

I Googled recipe ideas for a balsamic vinaigrette dressing and decided to try this one. It was SO fast and very easy. I combined two half-filled olive oil bottles so I could keep the extra dressing in the empty one in the fridge. So simple and yummy!

Here is the recipe:

1/4 cup balsamic vinegar

2 t dark brown sugar *optional (I put it in)

1 T chopped garlic (I only put in a little over a teaspoon)

1/2 t salt

1/2 t pepper

3/4 cup olive oil

Beat the ingredients, except for the oil, in a bowl until sugar and salt dissolve. Then beat in the oil slowly, whisking constantly. Or- put all the ingredients in a container with a lid and shake it up.

It was actually pretty sweet so I probably could have gone without the sugar. Or maybe at least half as much.

I used to not really be a salad person. If I did it was lettuce and ranch dressing. That’s it. Now I like just about everything. Maybe that means I’ve finally reached adulthood?

Nahhhhh.
